Roasted air fryer fingerling potatoes make the perfect side dish or simple snack. Coat the mini potatoes in olive oil, fresh rosemary and garlic then simply air fry until done. This recipe could not be any easier and it’s also absolutely delicious. Ingredients
- Fingerling Potatoes – I’m using a fingerling potato medley which also includes baby purple potatoes.
- Garlic Clove, Rosemary and Parsley – Chop and mince the garlic and fresh rosemary.
- Olive Oil, Salt, Pepper and Paprika Powder – Combine the spices then coat the mini fingerling potatoes completely to season.
Transfer the seasoned potatoes to the air fryer and cook.
How To Make Air Fryer Fingerling Potatoes
- Preheat the air fryer to 400 degrees F for 5 minutes.
- Scrub the potatoes clean then dry them with a paper towel.
- Cut each potato in half, lengthwise then transfer to a bowl.
- Finely chop the garlic and fresh rosemary.
- Season the baby fingerling potatoes with olive oil, minced garlic, fresh rosemary, salt, pepper and paprika powder.
- Toss everything in the bowl to combine.
- Spray the inside of the air fryer with a little bit of propellant-free cooking spray to ensure the potatoes don’t stick to the bottom and transfer the potatoes to the air fryer.
- Cook at 400 degrees F for 15-17 minutes, opening the basket halfway to shake the potatoes.
- Top with fresh parsley and serve immediately with your favorite dipping sauce or entree.
Use Fresh Herbs
Sure, you can use dried herbs in a pinch but using fresh herbs kicks this recipe up a notch. There is nothing like the bold flavor of fresh rosemary, parsley and even garlic on roasted air fried potatoes.
