This easy crockpot crack chicken recipe is one of the best weeknight meals to make. The dish comes together in just minutes and is made right in the slow cooker. Top with cheddar cheese and crispy bacon for the ultimate meal!

  • 1 lb chicken boneless, skinless breasts or thighs
  • 1 tbsp ranch seasoning or to taste
  • 8 oz cream cheese philadelphia brand is best
  • 1 1/2 cups cheddar cheese shredded
  • 4 strips bacon cooked until crispy
  • green scallions for garnishing


  • First, start by seasoning the chicken breasts or thighs with ranch seasoning on both sides.
  • Place them in the slow cooker and chop the cream cheese into small blocks.
  • Add the blocks of cream cheese to the top of the chicken.
  • Cook on high for 3.5-4 hours or low for 7-8 hours or until you can easily shred the chicken with 2 forks.
  • Cook the bacon until crispy or to your desired doneness. Chop the bacon into bite sized pieces.
  • Chop the scallions.
  • Use forks to shred the chicken and add 1/2 cup of shredded cheddar cheese. Mix in until fully melted and incorporated.
  • Top with the rest of the cheddar cheese, bacon bits and green scallions.
  • Finally, serve over buns, as a dip or low carb dinner and enjoy!


  • Use a kitchen thermometer to measure the chicken’s temperature for doneness. The internal temperature should reach 165 degrees F.
  • Use good quality cream cheese like the Philadelphia brand to ensure it melts properly. You won’t get the same outcome with some brands.
  • Substitute the fresh bacon for store bought bacon bits if you prefer.
