Coconut Mojito

This refreshing coconut mojito is the ultimate summer time drink. Mint leaves are muddled with limes then mixed with sparkling water, coconut rum and lime juice for a cocktail you won't be able to resist.

  • cocktail muddler
  • pitcher

Ingredients

  • 2 cups coconut rum
  • 1 cup mint leaves packed
  • 1 whole lime cut into wedges for muddling
  • 1/2 cup lime juice
  • 3 cups ice
  • 3 cups sparkling water
  • 3 tbsp sweetener or sugar

Instructions

  • Squeeze lime juice from 2 limes inside of a large pitcher.
  • Cut 1 lime into 4 wedges.
  • Add the mint leaves to the pitcher and the lime you cut into wedges.
  • Muddle the mint leaves and lime together.
  • Add the sweetener (or sugar), ice, rum and sparkling water. Mix everything together to combine.
  • Garnish each glass with lime and mint leaves if desired and enjoy!

Notes

  • Muddle the mint leaves and lime very well for maximum flavor.
  • Reduce the amount of sugar in your coconut mojito by using your sugar free sweetener of choice.
