- 2 cups coconut rum
- 1 cup mint leaves packed
- 1 whole lime cut into wedges for muddling
- 1/2 cup lime juice
- 3 cups ice
- 3 cups sparkling water
- 3 tbsp sweetener or sugar
Squeeze lime juice from 2 limes inside of a large pitcher.
Cut 1 lime into 4 wedges.
Add the mint leaves to the pitcher and the lime you cut into wedges.
Muddle the mint leaves and lime together.
Add the sweetener (or sugar), ice, rum and sparkling water. Mix everything together to combine.
Garnish each glass with lime and mint leaves if desired and enjoy!
