Preheat the air fryer to 365 degrees F for 5 minutes. Beat the egg in a bowl with the water to make the egg wash.
Cut each pastry sheet into 6 even rectangles.
Brush around the edges of each pastry with the egg wash. Add 1 tbsp of the strawberry preserves to half of the pastry rectangles. Cover the pastry sheets containing the strawberry preserves with the other half of the sheets that do not have the filling. Use your fingers to press against the pastries so they close properly. Line the air fryer with parchment paper and place the toaster strudels in the air fryer. Air fry at 365 degrees F for 10-12 minutes, flipping halfway.
In a bowl, combine the powdered sugar, vanilla extract and heavy cream. Whisk together to combine.
Remove the toaster strudels from the air fryer and allow them to cool a bit before topping with homemade vanilla icing.
- My toaster strudels were ready in 10 minutes but keep an eye on them after 8 minutes to ensure they do not burn as every air fryer may cook at a different speed.
- Don’t over fill the pastries, otherwise the filling will ooze out and they won’t look as pretty as they should.
- I like using strawberry preserves as the filling because it’s a lot thicker than jam or jelly and contains pieces of fruit. However, you may substitute for jam or jelly if you don’t have any on hand.
