Heat the oil to 365 – 370 degrees F in a pot.
Cut the onions into 1/4 inch round slices and separate the rings from each other.
In a bowl, whisk together the buttermilk and egg to combine.
In a separate bowl, whisk together the flour, baking soda and KFC seasoning.
Coat the onion slices in the the flour mixture first and set aside.
Combine all of the leftover flour mixture with the buttermilk and egg mixture in the same bowl. Mix until well incorporated.
Pour the panko bread crumbs into a separate bowl. Dip the rings into the buttermilk batter and allow the excess to drop off.
Coat the rings in Panko Bread Crumbs and transfer to the hot oil to fry. Do not over crowd. Fry for 1-2 minutes on each side or until golden.
Transfer the KFC onion rings to a paper towel lined plate to drain the excess oil.
Serve with your favorite dipping sauce and enjoy.
