Baked Cheesy Scallops

Ingredients

  • 1 lb scallops defrosted
  • 1 tbsp lemon juice
  • 2 tbsp dry white wine optional
  • 3 tbsp butter melted
  • 1 tsp salt or to taste
  • 1 tsp paprika powder or to taste
  • 1/2 tsp ground black pepper or to taste
  • 1/3 cup Panko Bread Crumbs
  • 3/4 cup parmesan cheese 1/2 cup for mixture and 1/4 cup for topping
  • 3 garlic cloves minced
  • fresh parsley for topping

Instructions

  • Preheat the oven to 425 degrees F.
  • Pat dry the scallops with a paper towel and transfer to a bowl.
  • Chop and mince the garlic cloves.
  • Melt the butter in the microwave in 30 second intervals.
  • Add the lemon juice, white wine, garlic cloves, salt, pepper, paprika, Panko Bread Crumbs, parmesan cheese and melted butter to the bowl with the scallops. Toss to combine.
  • Transfer the scallops to a baking dish and top with more parmesan cheese.
  • Bake at 425 degrees F for 12-15 minutes or until cooked through. Broil for the last 45 seconds to 1 minute.
  • Serve your baked cheesy scallops immediately with fresh lemon juice and parsley and enjoy.

Notes

  • Cooking times may vary so keep an eye on the scallops after the first 10 minutes.
  • The wine is optional and can be omitted without compromising on taste.
  • Store leftovers in an air tight container in the refrigerator for up to 3 days.
