How to Make Arugula Avocado Salad
- First, start off by thinly slicing your red onion. And chop your tomatoes into thick pieces.
- Second, rinse your arugula well and pit and dice your avocado.
- Arrange the arugula into a salad bowl and top off with the sliced avocado, tomatoes and onion.
- Next, prepare your Homemade Lime Vinaigrette.
How to Make Homemade Lime Vinaigrette
- Squeeze fresh lime juice into a separate bowl. Add olive oil and give it a quick stir.
- Crush and very finely mince your garlic clove and add it to your lime juice and olive oil mixture.
- Next, stir in your red pepper flakes, salt and ground black pepper.
- Finally, spoon your mixture over your arugula avocado salad, mix all the ingredients together well, serve and enjoy!
What Can I Serve Arugula Avocado Salad With?
You may serve your Arugula Avocado Salad with your Homemade Lime Vinaigrette with pretty much any dish. It’s so versatile that it goes well with pasta, rice and certainly any kind of meat. Sometimes, I make this salad a complete meal by adding shrimp, carne asada, or even grilled chicken to it.
Can I Prepare This Arugula Avocado Salad Ahead?
You may prepare this salad ahead of time. However, I recommend storing the Homemade Lime Vinaigrette in a separate air tight container so you don’t end up with soggy arugula. Also, it’s best to chop your avocado right before serving it and adding it at the end so it doesn’t brown. If preparing ahead, simply chop up your onions and tomatoes and mix together with the arugula. Place them in an air tight container and prepare your homemade lime vinaigrette. Place your vinaigrette in a separate air tight container. I recommend storing for only 1-2 days if using this method.
