Is happy hour really hijacking breakfast? When it comes to this Bailey’s French Toast Bake, I’d have to say, yes it is! I know everyone is familiar with regular french toast, whether you bake it or fry it is probably up to you. This dish is similar to a casserole and you can prepare it the night before if that’s more convenient for you! Now I want you guys to know that this is definitely not your average french toast! It’s got that sweet Irish cream taste you can only get from Bailey’s. I am absolutely in love with this breakfast dish and I know you’ll love it too. Whenever I have family visiting I serve up a beautiful breakfast table with this french toast, these Mango Pancakes and sometimes these Funfetti Muffins if I really want to make an impression!

Why Add Bailey’s To French Toast?
Bailey’s Irish cream is an alcoholic beverage. It’s got a super creamy texture and has a vanilla flavor that simply goes down well. It’s often referred to as a dessert drink. The reason I love adding it to my french toast casserole is because this is a baked dish, so the alcohol reduces and leaves behind this creamy, sweet taste you just can’t get enough of. The brioche bread soaks up all those delicious flavors and leaves behind the best french toast you’ll ever have!
Ingredients
- Brioche Bread
- Whole Milk
- Bailey’s Irish cream Liquor
- Eggs
- Brown Sugar
- White Granulated Sugar
- Ground Cinnamon
- Butter
How To Make Bailey’s French Toast Bake
- First, start by slicing you brioche loaf into 1 inch slices. I used an entire loaf of brioche bread which should render approximately 24 slices.
- Next, in a medium bowl, add milk, Bailey’s Irish cream liquor, eggs, brown sugar, white granulated sugar and ground cinnamon.
- Whisk all the ingredients together making sure to incorporate the eggs well into the mixture.
- Prepare a 9×13 baking dish by spraying it with non stick baking spray.
- Preheat the oven to 350 degrees F.
- Use tongs to dip each slice of brioche bread into the milk mixture. Then transfer the bread to a 9×13 baking dish.
- Once you’ve finished dipping each brioche slice into your milk mixture and transferring them to the baking dish, top them off with any remaining milk mixture. When transferring to the baking dish, place them in a slanted upright position then place the next slice in front of it creating a row of bread slices.
- Cover your french toast casserole and refrigerate for 30 minutes or overnight.
- Next, bake covered in a preheated 350 degree F oven for 35 minutes.
- Cut thin slices of butter and set aside for now.
- Uncover and add the slices of butter to the top of the french toast slices and bake for another 10-15 minutes or until golden brown.
- Finally, serve topped off with fresh berries and maple syrup or whatever toppings you prefer!
Can I Make Baked French Toast Ahead?
It’s absolutely fine to make this french toast overnight. Prepare it the day before, cover and place in the refrigerator. In the morning, simply follow all of the same steps to bake your french toast casserole. I actually prefer letting it sit overnight because it gives the brioche bread plenty of time to absorb all of the milk mixture! Also, mornings are busy. Sometimes you just want to pop breakfast in the oven and keep it moving!
Storing Suggestions
If you’re not going to eat all of the french toast the same day, it’s fine. Simply let it come to room temperature and store in an air tight container. Refrigerate for up to 1 day for best results. Alternatively, you can freeze french toast after it’s been baked. Place the slices in an air tight container or zip loc bag and freeze for up to 1 month for best results. Reheat in the microwave or in a toaster oven.
Tips & Variations
- There are so many different ways to serve french toast. Some of my favorite ways include topping it off with powdered sugar, maple syrup, fresh berries or other fruits, or even whipped cream.
- If you don’t have brioche bread, you can also use Challah, semolina, French baguettes, or even ciabatta. I personally prefer brioche because it’s so buttery and it really compliments this breakfast dish well.
- Skip the Bailey’s Irish cream and simply add another 1/2 cup of milk for a kid friendly version of this recipe.
