These Banana Nutella Cookies make the perfect treat for any day of the week! They’re so easy to make and you probably have all the ingredients on hand. These are soft baked cookies with a center that’s loaded with Nutella and they’re also my kids favorite cookies! We make these on the weekends sometimes as a treat, especially when I have some ripe bananas to use up! - Bananas
- Nutella
- Vanilla Extract
- Egg
- Brown Sugar
- White Granulated Sugar
- Butter
- Flour
- Baking Powder
- Salt
- Unsweetened Cocoa Powder
How to Make Banana Nutella Cookies
- First, start by adding 2 tsps at a time of Nutella to a parchment paper lined baking sheet and use a spoon to spread it into a circle almost the size of your cookies. Freeze them for 30 minutes.
- Combine your butter, brown sugar and white granulated sugar in a bowl. Using either a hand mixer or your stand mixer, mix very well until the butter and sugar are well incorporated.
- Chop your bananas in smaller pieces so they are easier to mix.
- Next, add in your chopped bananas, egg and vanilla extract. Mix until well combined. These are your wet ingredients.
- In a separate bowl, combine your flour, baking powder, salt and unsweetened cocoa powder. Mix well using a whisk to combine. Sift your unsweetened cocoa powder if needed. These are your dry ingredients.
- Next, mix your dry ingredients 1/4 cup at a time with the wet ingredients. Scrape the extra flour from the sides of the bowl if needed.
- Chill your dough in the refrigerator for 30 minutes.
- Remove your cookie dough from the refrigerator and line a baking sheet with parchment paper. Take about a tbsp of butter to roll in your hands so that when you form the cookies the dough does not get stuck to your hands. Butter your hands throughout the process as needed.
- Next, roll your cookie dough into 1 inch balls, place on your parchment paper lined baking sheet and gently press down with your hand so they form a slightly flat circle. Line up all of your cookies before moving on to the next step as the Nutella softens quickly once removed from the freezer.
- Remove your Nutella dollops from the freezer and place each one on top of the prepared cookies.
- Next, butter up your hands again to prepare the top of the cookie. You will be forming a sort of sandwich cookie, if you will. Roll 1 inch cookie dough balls and gently flatten them into a circle with the palm of your hands. Place on top of the Nutella formed cookies already on your baking sheet. Run your fingers or a spoon along the edges to smooth them out and cover any exposed Nutella with cookie dough.
- Immediately, bake the cookies in a preheated 350 degree F oven for 10-12 minutes.
- Finally, remove the cookies from the oven and let them sit undisturbed on the baking sheet for about 15 minutes. Serve and enjoy!
Tips & Variations for Making Banana Nutella Cookies
- I recommend using a spoon to form your Nutella dollops. Form a circle that is slightly smaller than the cookies so that it fits well and closes.
- If you are feeling extra chocolatey, you may add 1/2 cup of chocolate chips to the cookie dough.
- These Banana Nutella Cookies are soft baked so do not over bake them. They may still look very soft when you remove them from the oven, but trust me they are done. They also have a slightly chewy texture.
- Do not skip out on using the extra butter to roll your cookie dough. This dough is sticky and will get stuck to your hands without the butter. It will be almost impossible to properly form your cookies without buttered hands.
