These Funfetti Muffins are a spin on classic funfetti cake or cupcakes! They have a nice vanilla taste and they’re super soft and moist on the inside. I had so much fun making these adorable muffins because I let the kids add the sprinkles in and they had a blast! These are great to make because they’re simple and there’s no messy frosting or icing. You don’t have to wait for the next birthday party to make these, try them today! Why Not Just Make Funfetti Cupcakes?
You can definitely turn these into a cupcake by adding some vanilla frosting to them but I love keeping things as simple as possible, especially when there are kids involved. No frosting or icing means less mess for mom to clean up! So that’s a win for me! Plus, the kids really love sprinkles! Sometimes we make these Mexican Sprinkle Sugar Cookies together because they enjoy making anything that involves colorful sprinkles!
Ingredients
- Flour
- Baking Powder
- Salt
- Butter
- White Granulated Sugar
- Eggs
- Milk
- Vanilla Extract
- Rainbow Jimmies Sprinkles
How To Make Funfetti Muffins
- First, start by creaming together the softened butter and sugar in a mixing bowl or in a regular bowl using a hand mixer.
- Add in the eggs, milk and vanilla extract while continuing to mix.
- In a separate bowl, combine the flour, baking powder and salt. Whisk the ingredients together making sure to remove any lumps from the flour.
- Add the dry ingredients to the wet ingredients about 1/4 cup at a time so you don’t end up in a cloud of flour dust. Continue mixing making sure to scrape the extra flour from the sides of the bowl as needed.
- Next, add the sprinkles and fold them in with a spatula to incorporate well into the muffin batter.
- Preheat the oven to 350 degrees F.
- Prepare a 12 cup muffin pan by adding the cupcake liners and spraying each liner with non stick baking spray.
- Next, fill each cupcake liner about 3/4 of the way with the funfetti muffin batter. Top off each muffin with more sprinkles if desired.
- Bake in a preheated 350 degree F oven for 23-25 minutes or until a toothpick inserted down the center of one of the muffins comes out clean. This means there shouldn’t be any wet batter clinging to the toothpick.
- Remove the funfetti muffins from the oven and allow it to cool down for about 10 minutes before removing them from the pan and allowing them to finish cooling on a cooling rack.
- Finally, serve with a cold glass of milk and enjoy!
How To Store Funfetti Muffins
Muffins should be stored at room temperature. Place completely cooled muffins inside an air tight container in a cool dry place, preferably on top of your kitchen counter. You can store them for up to 4 days for best results. I don’t recommend refrigerating muffins because the cold air will change the texture of the muffins. and they won’t be as soft. You can also freeze the muffins by wrapping them individually in plastic wrap and placing in an air tight container before putting them in the freezer. Freeze for up to 2 months for best results. For frozen muffins, let them thaw at room temperature or rewarm in the toaster oven or microwave.
Tips & Variations
- Turn these into funfetti cupcakes by adding some store bought or homemade vanilla frosting to them.
- Add 1/2 tsp of almond extract to give it just a little bit of that delicious almond flavor. I actually do this to mine sometimes and they come out so delicious!
- Try adding 1/2 cup of white chocolate chips to your muffins. I really wanted to keep this recipe simple for everyone but this is actually my favorite way of making them!
