Preheat the air fryer to 310 degrees F for 5 minutes.
If using a fresh pineapple, slice it up into rings and remove the core.
In a bowl, whisk together coconut flour, brown sugar, cinnamon, nutmeg and salt. In a separate bowl, beat the egg.
Pour the sweetened coconut flakes into a separate bowl. Pat dry the pineapple slices with a paper towel.
Dip each pineapple ring in the egg first, allowing the excess to drip off.
Now, dip the pineapple in the coconut flour mixture.
Dip the pineapple back in the egg.
Place the pineapple ring in the bowl with the sweetened coconut flakes. Really press the flakes into both sides of the pineapple rings so they stick well.
Spray the inside of the air fryer with propellant free coconut oil spray. Transfer the pineapple fritters to the air fryer and air fry at 310 degrees F for 15-17 minutes, flipping halfway. Remove when golden brown.
Top with vanilla ice cream and drizzle with caramel sauce while still warm (optional).
