Preheat the air fryer to 375 degrees F for 5 minutes.
In a bowl, combine the flour, baking powder, brown sugar, salt and pumpkin pie spice. In a separate bowl, mix together pumpkin puree, vanilla extract, egg, milk and melted butter. Pour the wet ingredients into the dry ingredients and mix together to form the pumpkin fritter batter.
Spray the inside of the air fryer with propellant free coconut oil spray. Use a 2 tbsp cookie scoop to scoop out each fritter and place in the air fryer. Air fry at 375 degrees for 8-10 minutes.
Remove from the air fryer and give each fritter a quick spray with the propellant free coconut oil spray so the cinnamon sugar sticks well to the fritters. Roll each pumpkin fritter in cinnamon sugar and drizzle with caramel sauce before serving (optional).
