Season the flounder fillets with salt, pepper, paprika, garlic powder and lemon juice. Set aside for now.
Preheat the air fryer to 400 degrees F for 5 minutes.
Finely mince the garlic, shallot and parsley.
Melt the butter in the microwave in 30 second intervals until fully melted.
In a bowl, combine the crab meat, garlic, shallot, parsley, old bay, seasoned bread crumbs and melted butter. Toss well until combined.
Scoop the crab meat mixture on top of the flounder fillets. Roll the flounders up and use a toothpick to hold them so they don’t fall apart.
Drizzle olive oil on top of the stuffed flounder fillets.
Transfer the stuffed flounder fillets to the air fryer and air fry at 400 degrees F for 18 minutes.
Top with more fresh parsley, serve and enjoy with a glass of wine.
