Ingredients

  • 2 salmon fillets
  • spicy cajun salad dressing to taste
  • 1 tbsp cajun seasoning or to taste
  • lime juice 1/2 of a lime to season salmon
  • 1/4 cup shredded carrots
  • 1/2 small red onion sliced
  • green leaf lettuce chopped
  • 1/2 tbsp unsalted butter

Instructions

  • Begin by making this homemade spicy cajun salad dressing or you can buy this store bought version instead (it might be the closest I've found) but I promise you the homemade version will not disappoint
  • In a bowl, season the salmon with fresh lime juice and cajon seasoning on all sides
  • In a pan, heat up the butter at medium high heat
  • Place the salmon in the pan and cook for 5-6 minutes on both sides or until fully cooked, browned and flaky
  • In a plate, assemble the lettuce, shredded carrots and sliced red onions
  • Cut the salmon into pieces and top off the salad with the salmon
  • Serve with the homemade cajun salad dressing and enjoy

Notes

    • Make sure to thoroughly cook the salmon until flaky and browned on the outside
    • I used green leaf lettuce for this recipe, but you can make it your own and add any additional toppings or use any kind of lettuce you'd like
