Who doesn’t love those cute little Peeps marshmallows, especially around Easter. They make any dessert look extra cute and even better, a martini! But this isn’t just any martini, it’s a yellow Peeptini cocktail made with Limoncello, marshmallow vodka and a few other ingredients. It’s sweet, creamy and the yellow Peep used to garnish this drink makes it extra special and extra cute! This recipe is a must for any Easter brunch just like these Easter Bunny Donuts and this tasty Ambrosia Fruit Salad.

Ingredients

  • Limoncello Liqueur and Marshmallow Vodka – The balance between the sweet marshmallow taste and the slightly bitter lemon flavor from the Limoncello balances out perfectly in this yellow Peeptini cocktail recipe.
  • Lemonade and Heavy Cream – The addition of heavy cream makes this cocktail very creamy like you’re drinking dessert.
  • Yellow Food Coloring and Yellow Sanding Sugar – Both of these ingredients are optional. The food coloring will make this Peeptini as yellow as you want it to be and the sanding sugar coats the rim of the glass for an even cuter look.

How To Make A Yellow Peeptini Cocktail

  1. Coat the rim of the Martini glass with lime juice to help the yellow sanding sugar stick to the rim.
  2. Pour the sanding sugar into a plate and rim the Martini glass with the sugar.
  3. In a cocktail mixer, combine ice, Limoncello, marshmallow vodka, lemonade, heavy cream and yellow food coloring.
  4. Shake for a few seconds, garnish with yellow marshmallow Peeps and serve immediately.

Recipe Notes

  • The yellow food coloring is optional. The more you add in, the brighter the color will but but I found that 15 drops worked well to make one cocktail.
  • Pinnacle whipped vodka was used to make this drink.
  • Don’t shake the mixer too vigorously since the peeptini has heavy cream in it.
