The first time I ever tried these pancakes was at IHOP and I immediately fell in love with them. I definitely wanted to try recreating them at home and I know you’ll love this recipe as much as I do. These Mexican tres leches pancakes are definitely worth making. I say Mexican pancakes because the Tres Leches cake originated in Mexico. Since this tres leches pancake recipe is a twist on one of my favorite Mexican desserts, I want to make sure I give credit where it is due.
We all know that IHOP serves these wonderful pancakes and sure it might be easy enough to just take a drive there for some delicious IHOP tres leches pancakes. However, these homemade ones are so much better. Especially since you can enjoy them right at home in your pajamas! Plus, you’ll only need a few simple ingredients to make this pancake recipe at home.
How To Make Mexican Tres Leches Pancakes
- First, combine 1/2 cup of milk, 1/4 cup of evaporated milk and 1/4 cup of sweetened condensed milk and whisk together to combine. This is your tres leches mixture for the pancake batter.
- Melt the butter in the microwave and make sure it has a chance to cool down before adding it to the batter.
- In a separate bowl, add flour and baking powder and whisk to combine.
- Add the egg, melted butter, vanilla extract and tres leches mixture to the flour and baking powder. Whisk together until combined.
- Spray a pan with nonstick cooking spray or heat oil or butter to cook the pancakes.
- In a pan over medium heat, add 1/4 cup of pancake batter to cook. Flip over once the bubbles around the edges have stopped popping. Cook for 2-3 minutes on each side and repeat until the pancake batter finishes.
- In a small bowl, combine 1/2 cup of each of the milks, whole milk, evaporated milk and sweetened condensed milk. Whisk together to combine. This is your tres leches mixture to pour over the pancakes for serving.
- In a stand mixer or bowl if using a hand mixer, combine heavy cream and 2 tbsp of sweetened condensed milk. Mix on high speed until stiff peaks form and it resembles whipped cream.
- Finally, top the tres leches pancakes with the tres leches mixture and homemade whipped cream. Serve with fresh berries if desired.

- Mix the heavy cream and sweetened condensed milk just until stiff peaks form. Make sure not to over mix because the whipped cream will curdle.
- Make sure to cook the tres leches pancakes over medium heat or medium low heat depending on the power of your stove. You definitely don’t want to burn the pancakes by cooking them over high heat.
- Be gentle when flipping the pancakes over so you don’t drop them.
