Pour approximately 1 inch of oil into a large, heavy bottom pot.
Heat oil to 355 degrees F.
Combine the Bisquick mix, eggs, milk and vanilla extract in a bowl and mix together. Pour the batter into a squeeze bottle, using a funnel if you’ve got one on hand. Or use a cup to pour the batter into the hot oil but you’ll have to control how much batter comes out of the cup in order to get the right shape for the funnel cakes. Squeeze or pour the batter into the hot oil making a circle shape first then drizzle from side to side to create that classic funnel cake design.
Fry for 30-45 seconds on each side or until golden.
Immediately transfer to a cooling rack or plate and finish frying the rest of the funnel cakes. You’ll need to add more oil to the pot as needed since the cakes absorb it. Preheat the oven to 300 degrees F.
Top each funnel cake with chocolate and marshmallows then transfer to a parchment paper lined baking sheet. Bake at 300 degrees F for 4 minutes and broil for the last 45 seconds to 1 minute to give the marshmallows some color.
Remove from the oven and top with crushed graham crackers and some powdered sugar. Serve immediately and enjoy.
