In a pot over high heat, bring water to a boil.
Add the broccoli and boil just until fork tender but not mushy. This took me less than 5 minutes to achieve. You may also microwave the broccoli for about 3 minutes instead.
Preheat the air fryer to 350 degrees F for 5 minutes.
Drain the broccoli and allow to cool. Transfer to a bowl and mash with a potato masher. Add the egg, panko bread crumbs, parmesan cheese, cheddar cheese, minced garlic cloves, chopped green scallions, salt, black pepper, paprika powder and cayenne pepper to the bowl and mix everything together until well combined.
Take about 2-3 tbsp of the mixture and form into a round patty.
Transfer the broccoli cheese fritters to the air fryer, leaving enough space in between so they don’t touch each other. You’ll have to cook in batches.
Cook at 350 degrees F for 18-20 minutes or until the edges are golden brown, flipping halfway.
Serve immediately with your favorite dipping sauce and enjoy.
