Ingredients
- Pineapple Rings – Either slice up a fresh pineapple or you can buy canned pineapple rings
- Coconut Flour and Flakes – Sweetened coconut flakes and coconut flour coat each ring to give it that sweet, coconut flavor
- Brown Sugar, Nutmeg, Cinnamon, Salt – Combine these ingredients together and mix with the coconut flour
- Egg – You’ll need to beat the egg in a bowl to dip in your pineapple rings
How To Make Air Fried Pineapple Fritters
- Preheat the air fryer to 310 degrees F for 5 minutes.
- If using a fresh pineapple, slice it up into rings and remove the core.
- In a bowl, whisk together coconut flour, brown sugar, cinnamon, nutmeg and salt.
- In a separate bowl, beat the egg.
- Pour the sweetened coconut flakes into a separate bowl.
- Pat dry the pineapple slices with a paper towel.
- Dip each pineapple ring in the egg first, allowing the excess to drip off.
- Now, dip the pineapple in the coconut flour mixture.
- Dip the pineapple back in the egg.
- Place the pineapple ring in the bowl with the sweetened coconut flakes. Really press the flakes into both sides of the pineapple rings so they stick well.
- Spray the inside of the air fryer with propellant free coconut oil spray.
- Transfer the pineapple fritters to the air fryer and air fry at 310 degrees F for 15-17 minutes, flipping halfway. Remove when golden brown.
- Top with vanilla ice cream and drizzle with caramel sauce while still warm (optional).
