We all have a few ripe bananas lying around the house that we can use for something. And this banana muffin recipe will put them to good use. They’re sprinkled with just a hint of cinnamon and nutmeg before being air fried. Make them at the start of the week for a quick grab and go breakfast or pack them in a lunchbox for the kiddos to take to school. Either way, they are sure to be a hit. Using your air fryer for baked goods is one of the most convenient tricks ever. An Explanation Of The Ingredients
- Bananas – Use ripe bananas for this air fryer muffin recipe.
- Sugar – White granulated sugar works well but can be substituted for brown sugar.
- Egg – Beat the egg in with the bananas in the stand mixer.
- Vanilla Extract – Add vanilla extract to give the muffins a light vanilla flavor.
- Oil – The oil will give the muffins a moist crumb.
- Milk – Add milk for soft fluffy banana muffins.
- Flour – Whisk the flour together with the rest of the dry ingredients.

How To Make Air Fryer Banana Muffins
- First, start by peeling very ripe bananas.
- Add the bananas to the stand mixer and mix until they are mashed.
- Add the egg to the bananas while mixing.
- Pour in the oil, vanilla extract and milk. Mix just until combined.
- In a separate bowl, combine the flour, baking powder, salt, cinnamon, nutmeg and sugar. Whisk together to combine.
- Mix once again while adding the flour mixture to the banana mixture about 1/4 cup at a time so you don’t end up in a cloud of flour dust.
- Stop to scrape the sides of the bowl as needed.
- Preheat the air fryer to 325 degrees F for 5 minutes.
- Spray cupcake liners with cooking spray and place them inside the muffin pan. You can use individual ones like these or a standard one like this.
- Use a spoon so scoop the batter and place it into each cupcake liner. The liners should be about 3/4 of the way full.
- Place the banana bread muffins inside of the air fryer and air fry for 12-15 minutes at 325 degrees F. Check on the muffins after the 12 minute mark and insert a toothpick to check for doneness. If it comes out clean, they’re ready.
- Finally, remove the banana muffins from the air fryer and let them cool down before removing them from the muffin pan. Serve with a cold glass of milk and enjoy!
Do Air Fried Muffins Taste The Same As The Baked Ones?
I personally did not notice any difference in the taste of air fried banana muffins versus when I bake them. They were both moist and soft on the inside. Air fryer muffins do tend to have somewhat of a crispier edge. But that’s the only thing that really stood out to me.
Can I Make Banana Bread With This Recipe?
You can absolutely make air fryer banana bread using this exact recipe. You’ll need a loaf pan that fits in your air fryer. It may need to cook for a bit longer. Just check on the banana bread frequently after the 15 minute mark. Mine took about 25 minutes to finish cooking when I tested this recipe for banana bread.

Storing Suggestions
Store completely cooled banana muffins in a paper towel lined air tight container. The paper towel will help absorb moisture so the muffins don’t end up soggy. They should keep for up to 5 days at room temperature using this method. Change out the paper towel as needed if you see that it has become damp. You can also freeze air fried muffins for up to 2 months. Just make sure to wrap them tightly with plastic wrap to prevent freezer burns. I like to place them in an air tight container in the freezer as an extra precaution as well.

- Add chopped walnuts to this recipe to make banana nut muffins. Simply fold them into the batter with a spatula.
- Depending on what kind of air fryer you own, the muffins might move around inside. This may cause some of them to not rise evenly. They’ll still taste the same so it’s nothing to worry about. I recommend using this type of muffin pan if you have that issue.
